Blogging from A-Z • E • Eggplant

Today is brought to you by the letter "E"!

(Disclaimer: Although this is typically a blog about my beadwork, I do let other parts of my life seep into this blog.  Food and beverage is a huge part of my life as I am the marketing director of a fantastic restaurant group!)

E is for eggplant! 

One very amazing thing about the restaurant group I work for, is that we have a produce farm on site at one of our restaurants!  It is 3 acres of awesomeness.   Last year we grew eggplant.  A LOT of it.  In fact, our farmer was blown away by all the eggplant that grew.  At one point during the growing season there was so much eggplant, our chefs at all three restaurants an our catering company couldn't take any more of the eggplant.  We ended up donating 200 pounds to the local food pantry, and that same night gave an eggplant away to any guest who would take one! 

Another fun thing about the produce farm within our own company, is seeing all the different ways the chefs utilize our abundant harvest.  Boy, did they get creative last year....eggplant fritters, eggplant purees, eggplant vinaigrettes, and more!

  2. I so want to like it but I don't. My dad used to make an awesome eggplant parm but he cut the slices wafer thin and then pressed them for hours to get the liquid out.
